White Bean Chicken Chili Recipe

INGREDIENTS:
SALSA VERDE
* 2 cups tomatillos, coarsely chopped
* 1/2 cup onion, chopped
* 1/2 cup cilantro or parsley, chopped
* 2 fresh or pickled jalapeno pepper, chopped
* 2 clove garlic, minced
* 1/2 teaspoon lemon pepper
* 1/2 teaspoon dried oregano
* 1/2 teaspoon adobo seasoning or garlic powder
* 3 tablespoons lime juice
WHITE CHILI
* 2 1/2 cups water
* 1 teaspoon lemon pepper
* 1 teaspoon cumin seed
* 4 skinless chicken breast halves
* 1 teaspoon olive oil
* 1 clove garlic, minced
* 1 cup onion, chopped
* 1 cup yellow chiles, diced
* 2 9 oz. pkg. frozen White shoepeg corn, thawed
* 3 tablespoons lime juice
* 1 teaspoon ground cumin
* 2 15 oz. cans white beans, undrained
* 1 cup tortilla chips, crushed
* 1 cup shredded monterey jack cheese
DIRECTIONS:
1. Combine all salsa ingredients in medium bowl; mix well. Refrigerate at least 30 minutes.
2. In a large saucepan, combine water, 1 teaspoon lemon pepper and cumin seed; bring to a boil.
3. Add chicken breasts. Reduce heat to low; cover and simmer 20 to 28 minutes or until chicken juices run clear.
4. Remove chicken from bones and cut into bite size pieces. Return chicken to saucepan.
5. Add olive oil to medium skillet and saute the onions and garlic until tender, add to chicken mixture.
6. Add the chiles, corn, lime juice, and ground cumin to the chicken mixture. Bring to a boil.
7. Add the beans; cook until throughly heated.
8. To serve, place a handful each of tortilla chips and cheese in a bowl.
9. Ladle hot chili over cheese. Top with salsa verde and stir.

Mom makes this white bean chicken chili recipe for our annual Cinco-De-Mayo party and it's a huge hit every year. The green chilies really give this white chili a great kick!
INGREDIENTS:
* 2 lbs. navy beans, soaked
* 4 skinless chicken breasts, diced
* 1/3 cup olive oil
* 2 large yellow onions, diced
* 1 can green chilies, diced
* 1 can petite diced tomatoes, drained
* 3 garlic cloves, minced
* 1/4 cup ground cumin
* 1/3 cup fresh cilantro, chopped
* 2 T oregano
* 1/2 tsp cayenne
* 1 tsp cloves
* 1 tsp paprika
* 3/4 gallon chicken stock
* 12 oz monterey jack cheese, shredded
* 24 oz low-fat sour cream
DIRECTIONS:
1. Wash beans. Cover with 3 inches of water. Soak overnight.
2. Saute chicken in 1 tablespoon olive oil until done. Cool and dice.
3. Heat remaining oil. Saute onions, chilies and garlic until translucent.
4. Add tomatoes and spices.
5. Stir in beans and chicken stock and cook until beans are soft, approximately 2 - 3 hours.
6. Add cheese, stirring continuously.
7. Add in sour cream, stirring constantly.
8. Fold in chicken. Serve hot.

This white bean chili recipe has a light Southwestern flavor and makes a great starter for a Mexican dinner or served alone. My husband and I pair this with veggie quesadillas for a low-fat and tasty meal.
INGREDIENTS:
* 1 lb white beans
* 2 lbs boneless, skinless chicken breast
* 1 tbsp olive oil
* 2 med onions, chopped
* 4 cloves garlic, minced
* 2 (4 oz) cans chopped chiles
* 2 tsp ground cumin
* 1-1/2 tsp crushed oregano
* 1/4 tsp ground cloves
* 1/2 tsp ground cayenne
* 6 cups low-sodium chicken broth
* 3 cups reduced-fat shredded Jack cheese
* 1 pt fat-free sour cream
* Fresh cilantro & salsa
DIRECTIONS:
1. Sort, wash and soak beans overnight. Drain and rinse.
2. Place chicken in sauce pan, cover with water and simmer for 15 minutes. Drain, cool and cut into cubes.
3. Heat oil in large pot. Add onions and garlic and saute until tender.
4. Stir in green chilies, beans and broth.
5. Bring to boil and add cumin, oregano, cloves and cayenne. Salt to taste.
6. Reduce and simmer for 2 hours.
7. Add chicken and bring to simmer.
8. Simmer 3-5 minutes then remove from heat.
9. Stir in 1 cup of shredded cheese.
10. Ladle into bowls and garnish with cheese, sour cream, salsa and chopped cilantro.

INGREDIENTS:
* 1 teaspoon olive oil
* 1 cup onions, chopped
* 1 clove garlic, minced
* 1 teaspoon ginger root, minced
* 1/2 to 1 jalapeno chili, finely chopped
* 2 cups mushrooms, quartered
* 1 tablespoon flour
* 1 pound boneless, skinless chicken breast, cubed
* 2 (15 oz) cans white beans, drained
* 1 (14 1/2 oz) can reduced-sodium chicken broth
* 3/4 teaspoon ground coriander
* 1/4 teaspoon ground cinnamon
* 2 teaspoon dried oregano leaves
* 1 teaspoon ground cumin
* 1 bay leaf
For toppings:
* 1 small tomato, chopped
* 2 green onions, thinly sliced
* finely chopped cilantro
DIRECTIONS:
1. Heat oil in a a large saucepan over medium heat until hot. Add chopped onion, garlic, gingerroot and jalapeno chili and cook for 5 minutes.
2. Add mushrooms, cook, covered, until mushrooms are soft, about 5 minutes.
3. Stir in flour; cook 1 minute longer.
4. Add chicken, beans, chicken broth and herbs and heat to boiling.
5. Reduce heat and simmer, covered, until vegetables are tender and chicken is cooked, 10 to 15 minutes.
6. Discard bay leaf; season with salt and white pepper to taste.
7. Spoon chili into bowls and top with tomato, green onion and cilantro.

Combine this white bean chicken chili soup with pita chips or french bread for a tasty and filling meal. For a milder chili, replace diced green chilies with diced tomatoes.
INGREDIENTS:
* 1 1/2 lb. dried white beans
* 2 qt. chicken stock
* 3 yellow onions, chopped
* 3 cloves garlic, minced
* 2 tsp salt
* 2 tsp. vegetable oil
* 2 can (4 oz.) diced green chilies
* 3 tsp. ground cumin
* 3 tsp. oregano
* 3 tsp. coriander
* 1/2 tsp paprika
* 1 tsp white pepper
* 2 pinch cloves
* 2 pinch cayenne
* 5 boneless, skinless chicken breasts, cooked and diced
* 3/4 cup grated Monterey Jack cheese
* 6 green onions, chopped
DIRECTIONS:
1. In large kettle, combine beans, stock, half the onions, garlic and salt; bring to boil.
2. Reduce heat; cover and simmer 1½ hours or until beans are very tender, adding more chicken stock as needed.
3. Heat oil in skillet. Add remaining chopped onions and cook about 5 minutes, until tender and clear.
4. Stir in remaining spices over low heat.
5. Add into bean mixture.
6. Add chicken just before serving.
8. Sprinkle each serving with cheese and green onion.
