Chili Con Carne Recipe - OK, now get together your chili powders both California and New Mexico as well as your chipotle chili powder or canned chipotle’s and your cumin and oregano. Get a small bowl and put all the ingredients in it and mix it together with a little water at a time until you get a light to medium paste texture that you like. * 1 1/2 Tablespoons of New Mexico Chili powder.2 teaspoons of Chipotle chili powder or 2/3 canned chipotle peppers chopped fine.

* 1 2/2 to 2 1/2 dried oregano or freshly chopped oregano.
* 6 strips of bacon either store bought or custom cut at the butcher.3 lbs of chuck roast. Cut it into chunks of various sizes and shred some to if you * * like.1 teaspoon of salt or season salt or leave salt out for your guests to add themselves.
* 1 large brown or red onion finely chopped.
* 4 garlic bulbs finely chopped or use a garlic press.
* 1 1/2 teaspoons of Worcestshire sauce.1 seeded and finely chopped jalapeno pepper or more to your liking and heat tolerance.
* 1 3oz can of chopped green chilies. Hatch variety preferred.
* 1 can fire roasted tomatoes or 6 tomatoes that you have roasted yourself, chopped fine.
* 3 tablespoons of tomato paste.
* 3 cups of water.
* 2 tablespoons of fresh lime juice.
* 1 1/2 teaspoon of sugar.
* 1 teaspoon of baking cocoa.
* 1 can of either red beans or kidney beans or even pinto beans will do in a pinch. 14-16oz.
* 2 teaspoons of cornstarch diluted into 2 or 3 tablespoons of water.
* 2 bay leaves.

Now it is time to take the cornstarch and water and mix it together with a fork so that you can mash up any lumps that come about. When all the lumps are gone then add the cornstarch mix to the chili. This is your thickener. Take your beans and add it to the chili pot and stir in gently. Put in a touch of salt or add anything else to your chili con carne recipe that you think needs adjusting. If by chance the chili gets thicker than you like, you can slowly pour in a little light or dark beer very slowly to loosen it up a bit and if you dont like beer in your chili con carne recipe then add half a cup of good red wine.
