Chili Recipe Delicious Black Bean and Beef - This black bean chili recipe combo is for meat-lovers who like a little spice. For an extra kick, double the jalepenoes!
INGREDIENTS:
* 3 T vegetable oil
* 2 yellow onions, chopped
* 1 green bell pepper, chopped
* 1 red bell pepper, chopped
* 5 cloves garlic, minced
* 1 lb beef stew meat, cubed
* 2 lb boneless pork butt
* 1 28-oz can whole tomatoes, undrained
* 1/3 cup chili powder
* 2 jalapeno chili peppers, chopped and seeded
* 2 T ground cumin
* 1 tsp cayenne pepper
* 1/4 tsp salt
* 1/2 tsp black pepper
* 2 c black beans, cooked
* 1/2 c dry red wine
For toppings:
* Cheddar cheese, grated
* Fresh cilantro, chopped
* Red onions, chopped
* Sour cream
DIRECTIONS
1. Heat oil in large Dutch oven over medium-high heat.
2. Add onions, bell peppers, and garlic and saute until tender. Pour into bowl and set aside.
3. Add beef and pork to pan and cook over medium-high heat until no longer pink, stirring occasionally.
4. Return onion mixture to pan.
5. Stir in tomatoes and remaining spices.
6. Cover and simmer until beef and pork are just about tender, stirring occasionall, approximately 1 hour.
7. Add black beans and wine. Simmer uncovered until meat is tender and the chili begins to thicken, approximately 30 minutes.
8. Serve in bowls. Top with cheese, cilantro, red onions and sour cream as desired.
