Our Backyard BBQ / Ground Beef Chili recipe - We have found that this ground beef chili recipe tastes even better if you prepare it the night before your family cookout and refrigerate overnight to allow the flavors to mingle.
INGREDIENTS:
* 1 medium yellow onion, chopped
* 2 cloves of garlic, minced
* 2 green pepper, chopped
* 1 red peppersm chopped
* 2 pounds of ground chuck
* 2 cans crushed tomatoes with puree
* 2 cans of red kidney beans
* 1 small can of chopped mild green chile peppers
* 2 small jalepenos, chopped (optional, add for extra heat)
* 4 T chili powder
* 2 T cumin
* 2 tsp of cinnamon
* 2 tsp paprika
DIRECTIONS:
1. Saute the garlic, onion, and peppers in enough oil that covers the bottom of a large dutch oven pot.
2. Add the ground chuck and cook until no longer red.
3. Spoon out excess grease.
4. Add the crushed tomatoes to the pot, along with an equivalent amount of water measured from ONE empty tomatoe can.
5. Add the rest of your ingredients, bring the mixture to a boil, then simmer for 1 hour.
6. Adjust seasonings to your liking.
